staying fed in uncertain times
This week isn't going to be easy. Pandemic and political anxieties are colliding in full-force (and the limited daylight isn't helping), and as it's highly unlikely that we'll have definitive election results on Election Day , experts are already recommending that people double down on stress-reducing habits.
"We need to be eating healthy, we need to really be getting the right amount of sleep," Vaile Wright, the senior director of health care innovation at the American Psychological Association, told NPR in a recent interview.
Eating wholesome, nourishing meals, especially in times of unprecedented stress, is a buffer against stress and its effects. Over the last month, I've collected inexpensive, simple recipes — some are mine, many are not — that I plan on turning to this week.
I'd like to share them with you. Each day this election week, I'll send out some gentle suggestions of what to eat, with options for vegetarians and vegans. Maybe you'll make some of them, maybe it will just serve as a reminder to eat. I'll also highlight some organizations that are keeping folks fed in their communities.
